Lately I have been loving my organic rice cakes. They are super versatile and a quick, low calorie snack. I try my best to avoid gluten (a different post altogether... let's not go there right now) so rice cakes have become my version of toast. Not to mention, I love their crunch! Here are my favorite ways to eat these fiber-filled 60 calories of delight:
- Hummus & cucumber with a squeeze of fresh lemon
- Smoked salmon with pepper and a lemon squeeze ( think lox bagel...yumm)
- Avocado with lemon pepper and hummus
- Nut butter, banana and honey -- actually makes a pretty good dessert
- PB & J
- Turkey, hummus and mustard
- Tuna salad, pickles and avocado
The great thing about Rice Cakes is that they are bland enough to go with just about anything and yet savory enough to eat alone. I often grab one as I'm running to my evening classes. Rice cakes are an excellent pre-workout meal since they contain carbs (which you need) and they are easy to digest. What's your favorite way to eat a rice cake? xo
