Ok, so for the past few weeks (I know I've been holding out on you) I have become obsessed with popsicles. They are the perfect treat for every occasion. Whether as a late night treat or a mid-day snack, popsicles are fun to make, can be uber chic for your next event, and can be loaded with nutritious ingredients. That's right, they can be healthy and delicious! My two favorite words to put together.
I've experimented making blueberry, banana pops with tropical juice, as well as chocolate coconut pops with coconut, dark chocolate chips and chocolate almond milk. To keep it cute, add sliced whole fruit or leaves. To keep it healthy, try to limit the amount of juice (sweetener) to keep these babies low in calories and sugar content. If you need them to be sweetened try a little honey or organic stevia.

Watermelon Mint Pops!
All you need:
3 Cups of Ripe Watermelon (without skin)
5 Mint leaves
1/2 Cup Chia Seed Gel
Combine all ingredients in a blender. Pour into popsicle trays (or you can use little glasses) add the sticks and place in freezer for at least 3-4 hours. Makes four popsicles. If your watermelon is ripe, you shouldn't need to add any sweetener.
